In the heart of the Minervois region, along the road that connects Carcassonne to Béziers, the villages of Pouzols and Mailhac overlook a vast amphitheater of vineyards bordered by wild scrubland. The Cave de Pouzols et Mailhac vineyard is composed of clay-limestone soils with high stoniness which contributes to the concentration and maturity of the grapes. Each winegrower demonstrates an effective commitment to environmental performance. The 200 winemakers utilize their ancestral expertise alongside modern winemaking techniques.

Winemaking

Manual grape harvest with selective sorting and direct pressing
Pneumatic pressing with low-temperature settling
Aged on fine lees for 6 months and bottled in the spring season
