The Cave de Pouzols et Mailhac vineyard, approximately 550 hectares, is located south of Minerve. The terroir is composed of clay-limestone soils with high stoniness. The soil’s water reserves are average to low. The terraces of Pouzols et Mailhac are underlain by impermeable marl, allowing the vines to develop long root systems, which contributes to the concentration and maturity of the grapes.
In 2019, winegrowers collectively committed to the High Environmental Value (HVE) approach. It demonstrates an effective commitment to environmental performance. This is measured at several levels: contribution to the biodiversity of the vineyard, reasoned intervention in phytosanitary treatments, rational control of fertilization, management of water resources.

The 200 winemakers at the Pouzols et Mailhac winery craft their Minervois appellation wines with a passion for their terroirs. They utilize their ancestral expertise alongside modern winemaking techniques.
A high-end red winemaking workshop is in place, as well as a settling and flotation workshop for white and rosé wines. The winery also has 60 barrels made entirely of French oak for aging our AOP Minervois.
